Japchae (잡재) is a stir-fried noodle dish made from sweet potato noodles called 당면. You may know that the noodles themselves are alternatively called glass noodles due to them being transparent but since the noodles are stir-fried with soy sauce, they become golden in color. You would typically find thinly sliced vegetables in this dish such as carrots, spinach, and mushrooms which give 잡채 its colors. The word 잡채 has the literal meaning ‘mixture of vegetables’ due to the words 잡 which means mixed/stirred and 채 meaning vegetables. In many households, this dish is also made with the addition of meat and tends to be garnished with sesame seeds.
