Is a Plant-Based Diet as Bad as it Sounds?

In the 1950s, a high intake of red meats was promoted as the ideal diet by the food industry. Saturated fats raise your blood cholesterol and cause heart disease. With healthy alternatives, we can begin to live a healthier and more productive lifestyle.

The foods that we consume daily play a major role in our overall health. Many Americans believed that eating red meat was good for the body. This ideal American diet of the past, referred to as the Western diet, has been proven to cause a number of health problems such as diabetes and high blood pressure.

In Michael Pollan’s book, “In Defense of Food: An Eater’s Manifesto,” shared an experiment on the effects of the Western diet. In 1982, nutrition researcher Kerin O’Dea introduced the Western diet to a group of Aboriginals.

 This isolated Australian population had been living on the animals that they hunted and the plants that they gathered for thousands of years. Once the Western diet was introduced to the group of Aboriginals, they quickly developed high rates of obesity, heart disease, addiction and diabetes.

When the Aboriginals returned to hunting animals and gathering plants they lost weight, lowered their blood pressure and their health dramatically improved. Are our bodies any different from the Aboriginals?

Red meat consumption is associated with an increased risk of total, CVD (cardiovascular disease) and cancer mortality. Alternatives to the high intakes of red meat found in the Western diet are plant-based foods.

Studies suggest that people who are vegetarians have lower body weight, lower blood pressure and lower cholesterol levels. Compared with typical Western diets with high amounts of animal products, healthy plant-based diets are not only more sustainable but have also been associated with a lower risk of chronic diseases such as obesity, type-2 diabetes, cardiovascular disease and some cancers.

The evidence is strong, consistent and compelling that a diet of predominantly, or even exclusively, whole plant foods can promote health, selectively treat and reverse disease and confer comparable benefits to the planet

 

By consuming whole-foods such as these, you too can live a healthier lifestyle.

 

A whole food plant-based diet enables people with diabetes, high cholesterol and heart disease to reverse diabetes and possibly discontinue medications. Researchers found that food production is responsible for up to 30 percent of total greenhouse gas emissions, with animal products accounting for the vast majority—about three-quarters—of these effects.

A popular plant-based substitute for meat is soy.

“Soy has gotten a bad reputation over the years, but studies are more for soy than against it,” said nutritionist Angela Hyde.

These diphenolic compounds, which are found in uniquely-rich amounts in soybeans, possess both estrogen-dependent and -independent properties that potentially inhibit the development of breast cancer.  Even with strong evidence that the consumption of soy has positive effects, many are still doubtful.

There are men who believe that soy intake will lower their testosterone levels. “This is a common misconception,” physician Michael Greger continued. “It has pro-estrogenic effects in some places like bones and prevents bone loss.” This means that the pro-estrogenic effects are good for the body. More studies are debunking the myths about soy.

Tempeh is a traditional Indonesian soy product that has made its way to the United States. This soy-based product may not be as popular as tofu, but it is widely known among vegans. It is high in protein, cholesterol-free and low in fat.

Tempeh is also versatile.

“I would follow tempeh with a lot of fresh vegetables,” said Hyde.

You can enjoy tempeh with steamed vegetables on a bed of rice or you can toss tempeh in your tacos with cilantro topped with chopped black olives.

What if you want to be vegan but you are allergic to soy? Have no fear, because there are plant-based alternatives to soy.

Seitan is made from wheat gluten. It can closely replicate the texture of meat and is often used to make vegan foods like burger patties, deli slices and steaks. If you want to make your own delicious vegan burgers, seitan is the way to go.

Legumes are another healthy soy alternative. These can be lentils, kidney beans or black beans. “It’s good to include beans in your diet and beans are inexpensive,” Hyde continued. “This is what I share with some of the young adults that I work with.”

It may be difficult for Americans over the age of 40 to change from the Western Diet to a plant-based diet.

“I can’t tell you to stop eating meat when you’ve been eating meat for 30 years,” said Hyde.

This change can be much less difficult for younger people. Many young Americans have learned of the negative effects the Western diet causes and have adopted the healthy habit of consuming plant-based foods.

We should learn from the findings of O’Dea’s experiment. By changing our diet, we too can lose weight, lower our blood pressure and cholesterol and live a healthier life.

Professional Wrestler Defeated in His Run for Mayor of Ringgold, Georgia

A recent controversy surrounding candidate for mayor of Ringgold, Georgia, Paul Lee, didn’t do much in aiding his campaign, as he ended with 55 out of 644 total votes in his loss to incumbent Nick Millwood on Nov. 5.

Lee, who goes by the ring name “Natureboy,” has been a regional superstar over the past couple of decades south of the Mason-Dixon line, due to his affiliation with various minor league wrestling organizations, the most recent being Universal Championship Wrestling. His fame is met with acclaim from many, but it also draws a slew of controversy from major fans and even the wrestlers themselves, due to his impersonation of former WWE and WCW superstar Ric Flair. Lee is currently a major affiliate with the American Wrestling Federation (AWF). A former member of the AWF is part of those who are against the gimmick. The member chose to remain anonymous.   

“He’s like a cover band for Ric Flair,” he said. “The only reason he keeps people in the seats is because they don’t want to pay the extra 100 bucks that it takes to see the real Flair.”  

Fans have gone as far as violent threats toward Lee over his persona. A woman in the crowd at a AWF event in Ringgold pulled a loaded gun on him during a match, which caused Lee and officials within the organization to strengthen security at future events.  

“What that woman did was a disgrace,” said the former AWF member. “I support Paul for the way he was able to handle that situation. Lord only knows what could’ve happened had he not put a stop to her.” 

Lee also has seen controversy for his actions outside of the ring. A viral video of an altercation between him and a comedian, Grant Lyon, became physical, which ended in Lyon getting kneed in the groin. *Warning as the video contains graphic language. 

“It was ridiculous and completely avoidable,” said Lyon. “He was drinking and sending out threats in whatever kind of gimmick he does for wrestling. This kind of stuff is expected in what I do, but a knee in the balls isn’t how you typically expect to end a show.”   

Aside from his wrestling presence, Lee owns a used car lot and a gym in the Ringgold area. He hopes to open more gyms and even restaurants in the future, which coincide with his campaign agenda to expand the opportunities for business development throughout Ringgold.  

Lee’s most recent bid for mayor isn’t his first attempt. He attempted to run in 2015, but because of a residency requirement for the city of Ringgold, he was not allowed. He disputed his denial to become an official candidate and even threatened court action, but none of this came to fruition. This election ended with Nick Millwood becoming the mayor of Ringgold.   

“This city would’ve seen some change had they of let Paul run back then,” said Ringgold resident and Lee supporter, Chuck Hefner. “(Millwood) doesn’t have a spine on him.” 

Lee was cleared to run this year by election officials, and he did so despite previous controversy. His slogan, “Let’s make Ringgold RIGHT,” can be found in many posts made on his campaign’s official Facebook page by himself and his supporters.  

Lee’s campaign quickly found detractors from a Facebook page titled, “We don’t want Paul Lee for MAYOR.” The page has seen multiple posts regarding personal conflicts between Lee and members of the community, but many of the posts do not contain evidence to support the accusations made. The page has 658 followers, which is over 100 more than Lee’s own campaign page. *Warning as the page contains explicit posts 

Lee’s recent campaign quickly found more controversy after two teenagers stole some of his campaign signs. Lee decided to take efforts for punishment into his own hands by having one the teens hold up his campaign signs during election night. This has caused a stir from the parents of the teen as well as the community of Ringgold.  

“I am getting more news coverage on this thing alone than if something important happened,” said Lee in a live interview with Kelly Curtin of WTVC-TV Newschannel 9 News. “I mean the boys got caught stealing signs.”  

The controversy has since been overshadowed, due to Lee’s landslide defeat in the election for mayor of Ringgold.  

“It’s all part of the political process,” said winner Mayor Nick Millwood regarding the election controversy. “I hope the best for Mr. Lee as we move forward to keep providing for the community of Ringgold.”  

Lee was silent for the few days following the election, but he made a statement towards his supporters, via his Facebook campaign page.  

“With the election over there’s only 2 things to do,” said Lee in his post. “Make money and make deals—wooooo.”  

Mr. Lee declined to comment on the issues.   

More Artists, Less Arrests

Locals sipped and mingled on the second story of Racket in the Wynwood Arts District of Miami for the Hope Murals fundraising event on Nov. 16.

Hope Murals is a non-profit organization established by Founder and Executive Director Germane Dubois III, a former educator from the Bronx with decades of experience in executive leadership positions.

Dubois started the Hope Murals project with a vision of helping disadvantaged youth in critical areas understand their implicit worth, and by doing so, motivating them to take control of their future as well as seek out their goals and dreams. Outreach projects by Hope Murals have brought communities together in working towards brightening the future of children and young adults who come from less privileged backgrounds and neighborhoods.

The fundraising event took place upstairs inside of Racket, where board members, charitable members, and artists involved with the project were invited to celebrate the accomplishments thus far. A brief intermission allowed attendees to announce milestones they were proud to have met, as well as which milestones they looked forward to reaching.

Hope Murals has made its home base in Miami, and partnered with the Florida Department of Juvenile Justice to give the youth detained in Miami Dade County Juvenile Detention Center a chance to actively express themselves via artistic endeavors. The program is aimed at building not only a better physical environment for these adolescents, but also one of social acceptance and mental progression.

The walls of Miami Dade County Juvenile Detention Center, once run-down and decrepit, are now covered in enormous colorful murals, painted by the hands of the talented youth who are currently or have been detained at the center. By creating a platform for these kids to cultivate their skills and evolve their abilities, Dubois has given many families a new-found hope in the possibilities that exist for those who are struggling to detach from a cycle of crime and unstable behavior.

The event had a DJ, disco ball, and full bar for attendees to enjoy, with a percentage of each drink ordered going directly to the Hope Murals organization. The curators also had a table of shirts with “#HOPEMATTERS” printed across the back and the design logo on the front, which were on sale for $20 for those who wanted to represent the movement fashionably.

The main items being showcased were panoramic photographs of the murals, each separately framed and signed by the artists who painted them. The framed photos were being sold for $50 each.

Dubois took time during the middle of the night to speak on behalf of Hope Murals, and his message was clear: Hope Murals is just getting started with its plans and the goals the organization has met so far are only the beginning. Charitable donations have been steady and the number of sponsors is only growing.

Dubois pointed out how once people are aware of the real work Hope Murals is doing and they begin to resonate with the message, it is difficult to ignore such an inspiring movement that is not only changing lives, but also saving them.

“We want to acknowledge the heart and soul of Hope Murals… the artists who are in the house have blessed us with their time, talent, skills and more importantly their heart, because I cannot afford these artists, these artists are the real deal… so support the arts, y’all,” said Dubois.

Dubois also took a moment to thank some of the sponsors who are already supplying the organization with art supplies or are planning to in 2020. He mentioned how collecting art supplies is definitely one of the more strenuous labors of love he does for the organization. They are constantly in need of new supplies in order for the kids to have the ultimate freedom to create what they want, and decent art supplies do not come cheap.

One of the organization’s new sponsors, Smog Armor, plans to supply Hope Murals with spray paint supplies in the year of 2020. The company is visionary in their mission of making spray paint which is eco-friendly and helps neutralize polluted air, perfect for the murals that are often painted on the outside of buildings.

The night ended on a positive note with Dubois showing immense gratitude for those who came to support, and further encouraging attendees to buy drinks and art as it supported an awesome cause. He also thanked some of the artists who were a part of the earliest Hope Mural community projects. Many of these contributing artists who found their start in Hope Murals have since been exceeding in commissioned work opportunities all over the country and globe.

Competition between streaming services

Netflix has held the top spot for the best streaming service for a little over two decades now with streaming original movies and TV shows. Now, other streaming service like Hulu have emerged on the scene.

Netflix has been at the top tier of streaming services since breaking into the scene in 1997. Netflix started by mailing out DVDs to their users and excluded late fees, which helped to put many of the companies like such as Blockbuster out of business. Beginning in 2007,  Netflix launched their streaming service content which brings most of the internet traffic and now is the main part of the business. Movies were once Netflix’s main stream of the company but has since steered toward original TV shows. There are 151 million subscribers for Netflix worldwide as of 2019.

Hulu emerged on the scene in 2008, a year after Netflix switched its main focus to TV shows. Hulu continues to stream a lot of TV shows and comes in as the cheapest TV streaming service. Hulu offers a variety of TV series and movies. Hulu offers not only classic TV shows but also live TV. Hulu has tried to stream original TV show content like Netflix, but has not succeed like Netflix has. Hulu is best for people who watch TV show programming in the U.S. because, Hulu is only offered in the U.S.

There are pros and cons of having a Netflix subscription. One of the pro or advantages of having a Netflix subscription is that they give you a one-month subscription trial. This means you have one month to see what the service has to offer and if you would like to continue your subscription. Another pro of have a Netflix subscription is it’s a commercial-free streaming service. This means there will be no interruption when you are watching your favorite show. A con of the Netflix subscription is you can’t watch your favorite TV show instantly. It takes a period of time before new TV shows to become available. The last con about the Netflix subscription is your location determines what is available in your region and what is unavailable.

Just like Netflix, there are pros and cons of having a Hulu subscription. One pro of having a Hulu subscription is it has a larger library of different shows and movies. Hulu emerged on the scene with streaming TV shows and has kept that as their main focus. Another pro of having a Hulu subscription is they provide live TV.  Although channels do vary by your location, you still can get over 50 live TV channels. A con of having a Hulu subscription will be not having access to TV shows and movies while offline. Trying to watch Hulu on the go offline could be a disadvantage to you. Another con against Hulu is having to paying more to steer away from commercials and ads. This causes subscribers to pay more than the base amount of $5.99 cent a month.

On campus at Georgia State University, Netflix and Hulu were the top two answers with only one student selecting Amazon Prime.

 Student Chisom Achuko stated that, “I love to watch Netflix because it has a wide variety of shows and original content.” She stated one of her favorite shows on Netflix is a Netflix original called, “Orange is the New Black.” The reason begins that it’s her favorite one is because she can binge watch the show. Netflix drops their original TV shows in an entire season of 10 or more episodes. This separates them from Hulu because Hulu drops their episodes one at a time.

 “I rather binge watch a season of my favorite show than to wait for each episode to be release,” said Achuko. Netflix has a wide variety of shows that anyone in the family can enjoy.

One Georgia State University student, Shayana Massey, was conflicted between Netflix and Hulu.

She stated that, “I love Netflix because I can binge watch and it’s commercial free, but I also like Hulu because of its live TV.”  In the end, her final answer was Netflix and that’s because, “It’s overall the best streaming service.”

Each streaming service offers special qualities that set them apart from their competition. All in all, it depends on the person and what’s their preference. If you are interested in more of live TV and want to watch your latest shows, Hulu would be beneficial to you. If you like to sit on the couch binge watching, Netflix would be a useful streaming service for you. As of 2019, Netflix is still the overall best streaming service with Hulu coming close behind them.

Atlanta’s Not So Hidden Gem, the One and Only Plaza Theatre

Initially opened in 1939, the Plaza Theatre has remained an arduous mainstay for cult, art and independent cinema within Atlanta. The eclectic theatre has a rich history that is intertwined with Atlanta’s identity.

The perception of the Plaza Theatre by Atlanta locals is as colorful and diverse as the history of the theatre itself. “This is my first time, it looks pretty cool though,” said Atlanta local Anthony Sano.

The Plaza Theatre serves as more than just a theatre for Atlanta locals. Many Atlantans and visitors to the city are drawn to the emblematic neon sign which spells out a bright stylized PLAZA THEATRE as they pass by. The distinct Art Deco style of the neon logo and design of the Plaza Theatre has an anachronistic energy when seen in juxtaposition to Atlanta today. The design of the space is representative of the long rich history the Plaza Theatre has in the Atlanta community.

The Plaza Theatre was originally designed by Atlanta native George Bond. It was created to serve as both a cinema and live theatre space for the local community. The Plaza Theatre has occupied a multitude of roles in its time. Some of these roles the Plaza Theatre filled were more controversial than others.

In the 1970s, the Plaza Theatre became an adult theatre due to decreased profits. Burlesque performances were offered in the Plaza Theatre as well. Although this is no longer the case in present times, the Plaza Theatre still fufills a unique role in the community. The independent theatre has returned to its roots serving as a meeting ground for avant-garde cinephiles and theatre enthusiasts alike.

The Plaza Theatre showcases the eccentric LGBTQ+ cult classic film “The Rocky Horror Picture Show” every Friday at midnight. This weekly theatric showing is known to locals as the “Lips Down On Dixie”. The musical film follows a young lost couple who seek refuge in a secluded home in the woods. The ominous home is owned by the chaotic, hedonistic and gender expansive Dr. Frank-N-Furter. The film is filled with music, dancing, theatrics and chaos.

Along with the showing of the film, there is a live interactive volunteer cast that acts out the scenes in person during the film. “I love seeing Rocky Horror here, it’s always exciting seeing people dressed up in character for the show,” said Atlanta local Corbin McKinney. The weekly showing has become a both a safe space and gathering place for local members of the LGBTQ+ community in Atlanta.

In 2014, the Plaza Theatre decided to showcase the film The Interview by Seth Rogan and Evan Goldberg. At the time, the film was not being shown in mainstream commercial theatres. This was due to terrorist threats the distributing company Sony Pictures Entertainment received because of the film’s perceived controversial content. The threats were in response to the film’s portrayal of North Korean leader Kim Jung Un being killed. The showing of this film was a statement by Plaza Theatre and other independent theatres. The Plaza Theatre’s stance was a deliberate statement in direct opposition to coercive censorship.

Today, the Plaza Theatre is more organized. The theatre has been updated while still maintaining the heart of the space that is familiar to locals. This was made possible in part by Michael Furlinger and Chris Escobar, who spearheaded initiatives to improve the Plaza Theatre. Some of these changes and goals include acquiring a liquor license, donating profits to the Film Society, expanding the theatre seating and improving and maintaining the historic design of the space. The theatre’s historical place in the community as Atlanta’s only independent movie theatre was also secured during this time. The Plaza Theatre was designated protected status as a historic landmark in 2017.

The Plaza Theatre also serves as the center stage for the annual Atlanta Film Festival. This was accomplished due to Escobar’s efforts to reinvigorate the Plaza Theatre. Aside from being the current owner of the Plaza Theatre, Escobar is also the executive director of the Atlanta Film Society, which curates the Atlanta Film Festival. These changes have helped uplift the Plaza Theatre’s image and purpose by making it an integral space to the independent film community of Atlanta.

Despite the Plaza Theatre’s many roles over time, it has consistently been Atlanta’s home for independent theatre. Whether it was making statements, showing adult films, burlesque, arthouse, indie or cult films the Plaza Theatre has consistently been an independent space. It has continuously provided a space for ideas and community to flourish outside of the mainstream in Atlanta. How GSU Senior Destiny Elliott Balances Her Business, School and More

 

 Do you remember being a college student?  You probably had to write endless papers, create time for work and try to make it just in time to your first class of the day. Add a quickly growing business, community service and campus organizations to your to-do list.This is Georgia State University student Destiny Elliott’s impressive reality as founder of Destiny Elliott PR and Marketing Firm. She has turned her name into a well-known company. 

 

President of the National Association of Black Journalists, Web Master of the Public Relations Student Society of America, Ivy Leaf Reporter of the Eta Mu Chapter of Alpha Kappa Alpha Sorority, Incorporated and news anchor and reporter at Georgia State Television are just a few of Elliott’s campus titles. In addition, she is a member of the Video Ministry at Ebenezer Baptist Church and a frequent volunteer with Hands On Atlanta. Her self-founded scholarship program, The Destiny Elliott Journalism Scholarship, awards funding to two graduating seniors who will study journalism or communications in higher education. 

“This annual award is important to me because it is a platform that allows me to give back to my alma mater of G. W. Carver High School of Columbus,” says Elliott, “It’s dear to my heart as I make local and global impacts in the lives of young professionals in media.”

Elliott’s drive and entrepreneurial work ethic began in Columbus, Georgia.  Early on Elliott spent time taking photos and editing her photos with effects and uploading them to social media. 

“I was doing public relations and marketing since Myspace days, but could not put my finger on the practice yet,” says Elliott. She quickly got the hang of promoting her talents and her experiences at school. The community soon started referring to her as “Destiny, The Model.”

“It was no second guessing that I would major in journalism and concentrate in public relations when it was time for me to level up in the next steps of my life.” 

Elliott moved to Atlanta to pursue an education at Georgia State University. “I’ve been a boss!” Says Elliott. “Starting in the fashion and media industry at an early age paid off as I moved to a who’s who city such as Atlanta.” Exchanging business cards, attending press conferences and networking became second nature to Elliott by her sophomore year in college. 

Business owners soon began to enlist Elliott for her help making her businesses more visible. This sparked her idea of capitalizing off her reputation and work. 

“It was at that moment that I committed to combining my passion for journalistic storytelling and multimedia promotions into a company that I call my own– Destiny Elliott PR & Marketing Firm, LLC,” says Elliott. “May 1, 2019 is one of the best days of my life because I created a business that serves the universe in a multitude of ways. I view my firm like a baby, an entity whose existence is founded on love and a purpose to be the entrepreneur the world needs.”

Elliott does face some difficulties trying to balance school and entrepreneurship. Sometimes the weight of her responsibilities can be overbearing. 

“It costs to be a boss! While wearing many hats are appealing, there are some days when the load gets extremely heavy,” says Elliott. She often finds herself working well into the weekend to study for final exams and complete class assignments. She juggles client consultations while making sure she studies for her classes. Elliott also strives to maintain her social life with her friends, “I remind myself every day that I did not only choose this life. It chose me too.” 

Elliott overcomes these difficulties by simply reminding herself when to say yes and no to certain tasks. She creates a healthy balance of school, work and campus organizations. Spiritual healing plays a big role in this. 

“An entrepreneur who upholds a healthy mind, body, soul, and spirit will always be in popular demand because they invest in their inner being just as much as they serve the outside world,” says Elliott. Yoga, listening to birds sing and songs by Erykah Badu are all a part of her soulful rituals. 

Elliott also had to come to terms with not being able to attend every event presented to her. “I know when an event is beneficial when conversations expand further than exchanging business cards.”

This unique feature has a sweet story. “Not only does it stand tall and wear a crown, but it also preserves a unique spiritual meaning– social warmth, true friendship and southern hospitality.” These symbols make up the qualities of Elliott’s brand. 

Elliott offers words of wisdom for students wishing to build a business while juggling school and other responsibilities. She advises students to search for what makes them happy and what serves the world. She believes that these answers will present a purpose. 

“You must know that you have the power to speak to your target audience and to control what you need out of conversations. Students must be strategic with everything, each person you meet and every place that you go so that you sleep well at night knowing that you are walking into your destiny.”

 

Roommates vs. Doommates

Many roommates are longtime friends, while others are chosen at random. Especially during college, finding a convenient living situation on- or off-campus by the time the semester begins can be difficult and timely for students.

Living with another person, whether you know them or not, is hard. Having another person constantly occupying personal space has the potential to turn irritating, even hostile. While there are plenty of entertaining accounts of roommate horror stories shared throughout the internet and other media, some roommate relationships can blossom into lifelong friendships. Finding roommates who get along well is important if you’re going to be comfortable in your living space.

Sustaining a healthy relationship with a roommate can improve the overall experience of living with another person. While it can be hard, collectively deciding on ideals can make it easier to find somebody suitable to live with.

It was a cold fall day in Georgia. Daniella Phillips looked out on the property she lived on. She lives on this property with her dog, Baby Rocky (there is nothing baby about this dog, he is well over 100 pounds). As she looked out on to the property, she reflected. She realized that she never thought she would be here.

Not just here, as in the United States, but at this point in her life. She never thought she could be so happy. She finally had found her sense of purpose.

Phillips was born in Uruguay and had a fun childhood. She moved to the United States when she was 25 years old after Argentina’s economy had entered a recession. Anything that happens in Argentina has an effect in Uruguay, because Argentina is such a powerful country.

“Basically 99% of every single person that was my age, my high school peeps, my college friends, everyone left the country,” said Phillips.

Phillips was one of the last people to leave the country. It was tough for her, because she had no siblings and the decision to leave her parents was very difficult.

It was a weird time in her life. She had a good job in Uruguay and was finically stable but whenever she turned around another friend had moved away. Eventually, Phillips’ partner moved to the United States. Her partner pleaded and pleaded for her to move to the country as well. Phillips was naturally hesitant about moving to a country where she did not know how to speak the language.

One day, Phillips decided to go for it.

“My main idea was I am doing it for two years, make some money and come back,” said Phillips.

She embraced the challenge. Most people who left Uruguay moved to Italy or Spain, because that is where most Uruguayans have family or are from originally. It was the easy route, to go somewhere you know people and felt comfortable. Also, getting a visa was more difficult in the United States. Luckily, Phillips had that good job in Uruguay, and her visa was accepted.
When Phillips moved to the United States, she noticed that most people who move somewhere new try to stay around people like them.

Phillips thought to herself, “I cannot learn the language if I only speak my language.”
This led her to Romano’s Macaroni Grill, where she only got the job because one of the managers spoke Spanish. She wanted to be in the kitchen, but instead the manager made her into a food runner for her to have more interactions in English. Six months later, before she was fluent in English, the manager began to make her wait on tables.

“Good luck, you will be fine,” is what the managers told her.

She was scared to death to wait tables. It was not easy, but she continued to grow. Today, she is forever grateful those managers made her step out of her comfort zone, because this led to her being who she is today. It took her a little under two years before she was confident speaking with tables, but after that she described herself as a “snake in the grass.”

A snake in the grass is a perfect way to describe how difficult it was for Phillips to learn English. In English, we have all these weird sayings. These idioms do not mean what they literally say. A snake in the grass is a restaurant term for someone who is always taking tables, maybe even one or two they were not supposed to. These sayings though, are the reason that learning about a culture is very important when learning a new language.

“Like kicking the bucket, I do not know what that means. So, to me, you are literally kicking a bucket,” Phillips said.
Phillips grew more accustomed to the American culture through the friends she made at Macaroni Grill. For almost five years, when she would hangout with these friends, she would just sit and listen. She would have no idea what they were saying but eventually she began to gain more of the language.

Phillips ended up working at Macaroni Grill for 15 years. By the time she left, she ran the place. She was the head bartender who had more regulars than other servers would have guests on the floor. During this time, she would travel back and forth to Uruguay, and other places.

She felt as if she needed more though, she was happy, but never had that sense of purpose every human searches for. She had always thought about being a translator, but the timing was never right. But one day, she made the decision like she did when she moved to America and just went for it.

She had to take a 40-hour course in order to become certified at the University of Georgia. It was one of the hardest things she ever did.

“At one point, I had to ask myself if I was in a nursing class,” Phillips said.

The class was two hours a day, Monday thru Friday for a month. After all, if she could move to a country and not know the language and survive, why would this scare her?

After earning her certification, she became a freelance translator. She has more time to enjoy the land she lives on with a friend and Baby Rocky. She feels so much more fulfilled in what she does. She works mainly in hospitals and schools.

It is everything she dreamed of and more when she decided to just go for it.
